PENELOPE Architect is a wheated bourbon (75% corn, 15% wheat, 7% rye, 3% malted barley) aged a minimum of four years, then finished for six weeks in barrels built from two different French oak stave types, in partnership with cooperage Tonnellerie Radoux. Non-chill filtered. The nose leads with cream and crème brûlée; the palate is creamy and floral with subtle vanilla and oak, finishing long on vanilla.
